Ingredients:
- 0.7 kg ground beef
- 1 tbsp Worcestershire sauce
- 1 teaspoon liquid smoke
- 1 clove garlic, minced
- 0.5 cup mayonnaise
- 1 teaspoon lemon juice
- 2 tablespoons of vegetable oil
- 4 slices Texas toast or 1cm thick slices of white bread.
- Olive oil to grease the toast
- 4 tbsp (60 g) butter, divided
- 4 eggs
- Hot sauce, for serving
- Special equipment: grill pan
Preparation:
- In a large bowl, carefully combine the ground beef, salt, black pepper, Worcestershire sauce, and liquid smoke. Divide the ground beef into 4 equal portions and form them into thick patties. Place on a plate and refrigerate for 1 hour, then remove and bring to room temperature, about 30 minutes before frying.
- In a small bowl, combine garlic, mayonnaise, lemon juice, and salt to taste. Refrigerate until ready to serve.
- Heat a grill pan over high heat. Lightly brush the tops of each patty with vegetable oil and place them in the pan, oiled side down. Cook until the patties pull away from the pan and are browned, about 5 minutes. Brush them with more vegetable oil, flip them, and cook the other side until the patties are firm in the center and medium-rare, another 5 minutes. While the patties are cooking, lightly brush both sides of the bread with olive oil, then place them on the grill and cook for 1 minute. Flip them over and cook the other side. Place 1 slice of bread on each serving plate and brush with garlic sauce. Top with a patty, let them finish cooking, and then fry the eggs. Melt 1 tablespoon (15 g) butter in a small skillet over low heat. Crack an egg in the center, cover, and cook until the white is set and the yolk is still runny, about 5 minutes. Place an egg on top of each patty, season with salt and pepper to taste, and drizzle with a little hot sauce. Repeat with the remaining butter and eggs and serve.
