Healthy Summer Pasta Salad

Ingredients:

  • 220 g dry cavatappi pasta
  • A quarter of a red onion, chopped
  • 0.5 cup mayonnaise
  • 3 tbsp sour cream
  • 1.5 tbsp. apple cider vinegar
  • 1.5 tsp sugar
  • 3/4 tsp dry mustard
  • 1 cup cherry or grape tomatoes, halved or quartered if large
  • 2 tbsp chopped dill or chives
  • 1 ear of corn, kernels removed from the cob (about 1 cup)
  • 1 medium zucchini, finely diced

Preparation:

  1. Fill a large saucepan with water, add salt, and bring to a boil. Add the cavatappi pasta and cook according to package directions. Drain and rinse the pasta under cold water. Set aside.
  2. Meanwhile, soak the onions in cold water for 5 minutes, then drain.
  3. In a bowl, mix mayonnaise, sour cream, vinegar, sugar, mustard, red onion, 0.5 tsp salt and a little black pepper until smooth.
  4. Add the cooked pasta, tomatoes, dill, corn and zucchini to the dressing and stir until all ingredients are evenly distributed.
