Warm Broccoli Salad with Panko Bread

Ingredients:

  • 1 head of broccoli, florets removed from stem, stem peeled and sliced
  • 2 tsp plus 1 tbsp olive oil
  • 2 tablespoons whole grain breadcrumbs
  • 5 cloves garlic, sliced
  • 1/3 cup white wine
  • Red pepper flakes
  • Coarse salt
  • Zest of 1/2 lemon, grated on a fine grater

Preparation:

  1. Cook the broccoli in salted boiling water for 3 minutes. Drain in a colander and cool under cold running water. Dry on paper towels.
  2. Heat olive oil in a small frying pan, add panko breadcrumbs, lightly fry for 2-3 minutes. Let cool.
  3. Sauté the garlic in a deep skillet with the remaining tablespoon of olive oil for about 3 minutes. Pour in the white wine, add the cooked broccoli and red pepper flakes; season with salt. Continue cooking, stirring constantly, until wine until it evaporates, about 5 minutes. Place the ingredients in a salad bowl, sprinkle with grated lemon zest and panko breadcrumbs on top.
