Spicy Caribbean Melon Salad

Preparation:

In a large bowl, combine 2 tablespoons olive oil and 1 tablespoon each apple cider vinegar, finely chopped fresh ginger and thyme, 1 teaspoon crushed Scotch Bonnet pepper, 1/4 teaspoon ground allspice, and 2 finely chopped green onions and garlic cloves. Add 1 melon, peeled and finely sliced, 1 cucumber, peeled and finely sliced, and 1 cup pitted cherry halves; toss to combine. Season with salt and pepper to taste.
