Spicy beef patties with couscous topcook.tomathouse.com
Ingredients:
- 0.7 kg ground beef
- 2 carrots, finely grated
- 3 tbsp. unrefined olive oil
- 3 tbsp chopped dried apricots or light raisins
- 1.5 tbsp. couscous (280 gr.)
- 0.5 cup plain yogurt
- 1/4 cup finely chopped fresh cilantro
- 2 tsp hot paprika
- 3 green onions, finely chopped
- 1 tsp ground cumin
- 1/4 tsp ground cinnamon
Preparation:
- In a medium saucepan, combine 2 cups of water, half of the grated carrots, 2 tablespoons of olive oil, dried apricots, 1/4 teaspoon of salt, and a pinch of ground black pepper and bring to a boil. Add the couscous, cover, and remove from heat. Set aside until ready to serve.
- Meanwhile, in a small bowl, combine the yogurt, half the cilantro, 1 teaspoon paprika, and a large pinch of salt.
- In a large bowl, combine the ground beef, green onions, cumin, cinnamon, 1 teaspoon salt, the remaining grated carrots, and 1 teaspoon paprika. Mix with your hands, being careful not to pack the mixture too tightly. Form into four 2cm-thick oval patties.
- In a large nonstick skillet, heat the remaining 1 tablespoon olive oil over medium-high heat. Add the patties and cook until golden brown, 4-5 minutes per side for medium-rare. Fluff the couscous with a fork and stir in the remaining cilantro.
- Serve the cutlets with couscous and yogurt sauce.
