Quinoa and Pea Pod Salad

Preparation:

Cook 3/4 cup quinoa according to package directions; fluff. Transfer to a large bowl; add 1 cup each grated carrot, finely chopped cucumber, and finely chopped sugar snap peas, 1/2 cup raisins, and 1/4 cup each chopped parsley and salted sunflower seeds; toss to combine. Drizzle with olive oil and white balsamic vinegar; season with salt and pepper to taste.
