Spiced Apple Pancake on a Baking Sheet

Ingredients:

  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 tsp apple pie seasoning
  • 3 tablespoons unsalted butter, room temperature
  • 3 Golden Delicious or Gala apples, peeled, cored and sliced ​​into 0.5-1 cm thick rounds.
  • 1 and 3/4 cups premium flour
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1.5 tsp of baking soda
  • 1 teaspoon of salt
  • 2 cups whole milk
  • 3/4 cup whole milk Greek yogurt
  • 2 large eggs
  • 1.5 tsp vanilla extract
  • 1 cup powdered sugar
  • 5 tsp apple cider (unfiltered apple juice without sugar)
  • 1/4 teaspoon apple pie spice
  • Maple syrup and/or whipped cream, for serving

Preparation:

  1. Bake the pancake:


    Preheat oven to 450°F (230°C). Combine granulated sugar, brown sugar, and pie spices in a large bowl. Grease a rimmed baking sheet with 2 tablespoons butter and arrange the apple slices in a single layer; sprinkle with 1/3 cup of the sugar mixture. Bake until the apples are soft and the baking sheet is mostly dry, 25 to 30 minutes.
  2. Meanwhile, stir both flours, baking powder, baking soda, and salt into the remaining sugar mixture. In a separate bowl, whisk together the milk, yogurt, eggs, and vanilla. Fold the milk mixture into the flour mixture.
  3. Pour the batter over the apples and gently spread to cover the fruit. Bake until the top is dry and a toothpick inserted into the center comes out clean, 12-15 minutes. Brush with the remaining 1 tablespoon of butter. Let cool for 15 minutes.
  4. Prepare the glaze:


    In a bowl, combine powdered sugar, cider, and apple pie spice. Drizzle the glaze over the pancakes. Cut into square slices, arrange apple-side up on plates, and serve with maple syrup and/or whipped cream.
