Mashed potatoes with sausage and broccoli

Ingredients:

  • 0.7 kg small potatoes, cut in half
  • 450 g of Polish cooked and smoked sausage
  • 1.5 tbsp unsalted butter
  • 1 small head of broccoli, florets coarsely chopped
  • 1 cup sauerkraut, drained
  • 2/3 cup whole milk
  • 1 tbsp. grainy mustard

Preparation:

  1. Place the potatoes in a large microwave-safe bowl with 3 tablespoons water; cover with plastic wrap and microwave until tender, about 12 minutes.
  2. Meanwhile, cut the sausage into 4 equal pieces; then cut each piece in half lengthwise. Melt 1/2 tablespoon of butter in a large skillet over medium heat. Add the sausage and cook, turning occasionally, until browned and heated through, about 10 minutes. Transfer to a plate and cover with foil to keep warm.
  3. Increase the heat under the skillet to medium-high; add the remaining 1 tablespoon butter. Add the broccoli and 1/4 cup water and cook, stirring, until crisp-tender, about 5 minutes. Add the sauerkraut and stir to heat through.
  4. Drain the potatoes. Heat the milk in the microwave for about 1 minute; add to the potatoes along with the mustard, 0.5 teaspoon of salt, and black pepper to taste. Roughly mash with a potato masher or fork. Serve the potatoes with sausage and cabbage.
