Crispy cauliflower fried in brown butter topcook.tomathouse.com
Ingredients:
- 1 head of cauliflower (about 1 kg), separated into small florets
- 1/4 cup unsalted butter
- 3 tbsp fresh bread crumbs
- 2 tsp freshly squeezed lemon juice
- 1 tbsp chopped parsley
Preparation:
- Bring a large saucepan of salted water to a boil. Add the cauliflower and cook until tender, about 5 minutes. Drain in a colander.
- Meanwhile, heat a large skillet over medium-high heat. Add the butter and swirl the pan until it melts. When the foam from the butter begins to subside, after a couple of minutes, add the bread crumbs. Continue cooking and swirling the pan until the butter begins to darken, about 30 more seconds. Remove the pan from the heat and add lemon juice to stop the frying process.
- Add the cauliflower and parsley to the pan; season with salt and pepper and toss to coat evenly with brown butter. Heat over medium heat if necessary. Transfer to a serving platter and serve immediately.
Culinary adviceIf the cooked cauliflower gets cold, reheat it in the microwave before adding it to the pan with the brown butter.
