Edamame Bean Snack Mix topcook.tomathouse.com
Ingredients:
- 8 cups crispy rice squares (e.g., breakfast cereal, Chex)
- 1 package (100g) rice crackers, broken into bite-size pieces (about 3 cups)
- 2 cups crispy chow mein noodles
- 2 cups fried edamame beans
- 1 cup unsalted roasted peanuts
- 4 tablespoons unsalted butter
- 1/4 cup lightly salted soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp dark sesame oil
- 1/8 tsp chili oil
- 1.5 tsp Chinese 5-spice seasoning
- 1.5 tsp garlic powder
- 2 cups sesame sticks (or broken sesame breadsticks)
Preparation:
- Preheat oven to 120°C. Combine rice squares, crackers, noodles, edamame, and peanuts in a large bowl. If using breadsticks instead of sesame seeds, add them now.
- Melt the butter in the microwave until completely melted. Add the soy sauce, Worcestershire sauce, sesame oil, chili oil, five-spice powder, and garlic powder.
- Spread the mixture on 2 baking sheets and spread it out. Drizzle with butter and mix well with your hands.
- Bake for 1 hour, stirring every 15 minutes and rotating the baking sheets halfway through; stir in the sesame seeds 15 minutes before the end of the baking time. The mixture is ready when the oil is absorbed and the mixture becomes crispy.
