Baked cauliflower

Ingredients:

  • 1 head cauliflower (about 1 kg), cut into bite-sized florets (about 8 cups)
  • 1/4 cup extra-virgin olive oil
  • 5 cloves garlic, coarsely chopped
  • 1/4 tsp red pepper flakes
  • 2 teaspoons coarse salt
  • 2 tsp coarsely chopped fresh thyme leaves

Preparation:

  1. Preheat oven to 230°C.
  2. Toss the cauliflower on a baking sheet with olive oil, garlic, and red pepper flakes, season with salt and thyme, and toss again. Bake until golden brown and tender, about 20 minutes. Transfer to a serving platter and serve.
