Roasted asparagus

Preparation:

Snap off the bottom ends of two bunches of thin asparagus; discard. On a rimmed baking sheet, toss the asparagus with 2 tablespoons olive oil and season with salt and pepper. Grill in the oven until lightly charred, 4-6 minutes. Transfer to a platter and drizzle with red wine vinegar and olive oil. Sprinkle with shredded Asiago cheese.
