Ingredients:
- 2 cups premium flour
- 2 tbsp. sugar
- 2 teaspoons of baking soda
- 2 tsp ground cinnamon
- 1 teaspoon of salt
- 2 tablespoons of vegetable oil
- 4 large eggs
- 4-6 carrots, grated
- Butter to grease the pans
Preparation:
- Preheat oven to 190°C.
Grease a 22 x 32 cm baking pan or two 20 cm round cake pans with butter.
- In a large bowl, combine the flour, sugar, baking soda, cinnamon, and salt. Using a mixer, pour in the vegetable oil, then add the eggs, one at a time, beating after each addition. Stir in the carrots, distributing them evenly. Pour the batter into the prepared pan. Bake for 30-40 minutes, until a toothpick inserted into the center comes out clean.
- Remove the cake layer(s) from the oven and let cool in the pan. Slice and serve.
