  2. Cut the potatoes into wedges. In a large bowl, combine the olive oil, hot sauce, thyme, paprika, and cumin. Toss the potatoes with the dressing and arrange them in a single layer on a nonstick baking sheet. Season the wedges with salt and black pepper and bake for 20 minutes, turning once.
