Sweet bread with zucchini and chocolate chips

Ingredients:

  • 3 cups premium flour
  • 0.5 tsp baking powder
  • 1 teaspoon of salt
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 1 teaspoon of baking soda
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 2 tbsp. grated zucchini
  • 1 cup chopped pecans
  • 1 tbsp. semi-sweet chocolate granules
  • 1 tbsp orange zest
  • Whipped cream, for serving
  • Zucchini ribbons, for serving

Preparation:

  1. Preheat oven to 350°F (175°C). Grease two 9 x 5-inch loaf pans.
  2. Sift together the flour, baking powder, salt, spices, and baking soda. In a large bowl, beat the eggs until fluffy. Add the sugar and continue beating. Add the vegetable oil, vanilla extract, zucchini, pecans, chocolate chips, and orange zest. Fold in the sifted flour mixture. Pour the dough into the prepared loaf pans.
  3. Bake for 50 minutes or until a wooden skewer inserted into the center comes out clean. Remove the loaves from the pans and let cool. Chill in the refrigerator before slicing. Serve with whipped cream and zucchini ribbons.
