Grapefruit, Sweet Onion, and Basil Salad

Ingredients:

  • 2 grapefruits, peeled and cut into large slices
  • Half a red onion, peeled and thinly sliced
  • 1/3 cup pitted black olives, chopped
  • 1 bunch basil, leaves finely chopped (about 1 cup)
  • 2 tbsp chopped chives
  • 3 tablespoons aged balsamic vinegar
  • 3 tablespoons extra-virgin olive oil

Preparation:

  1. Arrange the grapefruit slices, slightly overlapping, on a serving platter. Sprinkle the grapefruit with onion rings. Then garnish with olives, basil, and green onions. Drizzle the salad with balsamic vinegar and olive oil. Season with salt and black pepper and serve.
