Ingredients:
- 1 cup shredded cooked chicken
- 3 slices Black Forest ham, sliced
- 2 teaspoons Dijon mustard
- 1 frozen quiche base, 22cm in diameter.
- 1 green onion, thinly sliced (white part separated from green part)
- 3 slices Swiss cheese, sliced
- 1 cup low-fat cream (10%)
- 4 large eggs
- 1 cucumber
- 3 cups tightly packed small arugula (about 100 g)
- 1 tbsp. white wine vinegar
Preparation:
- Place a rimmed baking sheet on the middle rack of the oven; preheat to 425°F (220°C). Spread mustard on the bottom of the crust. Then layer the chicken, ham, green onions (white part), and cheese. In a small bowl, combine the cream, eggs, 1/2 teaspoon of salt, and a pinch of freshly ground black pepper; pour in the filling. Gently toss to ensure the filling is coated with the liquid; sprinkle with green onions.
- Carefully place the quiche pan on a hot baking sheet. Bake until the filling is set, about 30 minutes.
- When the quiche is almost done, thinly slice the cucumber and toss with the arugula, vinegar, and a pinch of salt and black pepper. Serve the quiche with a salad.
