Linguine pasta in white sauce with clams

Ingredients:

  • 450 gr. dry linguine or spaghetti pasta
  • 36 small clams, washed with a brush
  • 1/3 cup olive oil
  • 3 tbsp finely chopped garlic
  • 0.5 tsp red pepper flakes
  • 3/4 cup dry white wine
  • 1/4 cup water
  • 3 tbsp finely chopped parsley
  • Grilled bread, for serving (optional)

Preparation:

  1. Bring a large pot of water to a boil and add generous salt. Cook the pasta until al dente (tender but still firm).
  2. While the pasta is cooking, prepare the clam sauce. Heat the olive oil in a large skillet over medium-low heat. Add the garlic and cook until golden brown, about 3 minutes. Add the red pepper flakes and cook for another 30 seconds.
  3. Add the wine and water and increase the heat to high. Add the clams, cover, and cook, shaking the pan occasionally, until all the clams have opened, about 6 minutes.
  4. Drain the pasta and transfer it to the clam sauce. Sprinkle with parsley and toss. Season with salt and pepper to taste.
  5. To fry breadPreheat a grill pan over medium heat. Brush both sides of the bread with olive oil. Cook for 1-2 minutes on each side until golden brown.

    Place the dish and bread on warm plates and serve immediately.
