Panzanella with sweet peppers, white beans and chicken

Ingredients:

  • 8 cups baguette, cut into 2.5cm cubes, stale or toasted (about 250g)
  • 900 g ripe tomatoes, cut into 2.5 cm pieces (about 4 cups)
  • 1 cup canned white beans, rinsed
  • 1 cup shredded grilled chicken
  • 1 cup thinly sliced ​​Iranian or hothouse cucumber
  • 0.5 cup chopped fresh parsley
  • 0.5 cup chopped roasted red pepper
  • 1/4 cup chopped fresh basil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 3/4 cup olive oil
  • 1 teaspoon finely chopped fresh oregano

Preparation:

  1. Place bread cubes in a large bowl, add tomatoes, beans, chicken, cucumbers, parsley, pepper and basil and toss to combine.
  2. In a medium bowl, combine the vinegar and Dijon mustard. Stir in the olive oil and oregano.
  3. Drizzle the dressing over the salad and toss. Season with salt and pepper and toss again.
