Ingredients:
- 820 g canned chickpeas, pre-rinsed
- 2 cloves garlic, finely chopped
- 1/2 cup chopped cilantro
- 3/4 cup breadcrumbs
- 1 tsp ground cumin
- 3 tablespoons of vegetable oil
- 3/4 cup plain Greek yogurt
- Coarse salt
- 170 g of mixed lettuce
- 2 tomatoes (1 finely chopped, 1 sliced)
- 4 slices whole wheat sandwich bread, lightly toasted
- 4 green onions (white and light green parts only), chopped
- 1/3 cup canned cherry peppers or jalapeños and 2 tablespoons brine from the jar
Preparation:
- In a food processor, pulse the chickpeas, garlic, half each of the green onions, cilantro, and pickled pepper, breadcrumbs, and cumin for 3 minutes. Form into 4 thin patties, each 7.5 cm in diameter.
- Heat vegetable oil in a large nonstick skillet over medium-high heat. Add the patties and cook for 3-4 minutes until golden brown.
- Meanwhile, in a medium bowl, combine the yogurt with the pickled pepper brine and season with salt. In a large bowl, combine half the yogurt dressing with the leafy greens, chopped tomato, remaining green onion, and cilantro.
- Place the falafel burgers on the bread, top with tomato slices, the remaining yogurt dressing, and marinated peppers. Serve the burgers with a salad.
