Warm Salted Caramel Banana Pudding topcook.tomathouse.com
Ingredients:
- 3/4 cup sugar
- 2.5 tbsp cornstarch
- 2 and 1/4 cups milk
- 3 large egg yolks, lightly beaten
- 55 g unsalted butter
- 2 tsp vanilla extract
- 2 medium bananas, cut into 0.5 cm thick circles.
- 0.5 tsp coarse salt
Preparation:
- In a medium saucepan, combine 1/4 cup sugar and cornstarch.
Whisk in 1/4 cup milk and the egg yolks until smooth. Stir in the remaining 2 cups milk and bring to a boil over medium heat, stirring frequently and scraping the bottom and corners of the pan with a heatproof silicone spatula. Once boiling, stir constantly until the pudding thickens, about 2 minutes.
- Remove from heat and stir in 1 tablespoon butter and vanilla extract. Divide the pudding among 4 short glasses.
- In a medium skillet, combine the remaining 1/2 cup sugar with 2 tablespoons water to moisten the sugar. Cook over medium heat, swirling the pan to ensure the sugar cooks evenly, until dark golden brown, 5-7 minutes.
Add the remaining 3 tablespoons butter, bananas, and salt and cook, stirring, until the bananas are slightly softened, about 2 minutes.
- Place the caramelized bananas on top of the pudding and serve warm.
