Salad with salami

Ingredients:

  • 4 cups fine arugula
  • 1 fennel root, quartered and thinly sliced
  • 1 cup grape tomatoes, halved
  • 3 tablespoons extra-virgin olive oil
  • Juice of 1 lemon
  • 60 g salami, thinly sliced
  • Grated Parmesan cheese, to sprinkle

Preparation:

  1. Combine arugula, fennel and tomatoes in a large bowl and season with salt and pepper to taste.
  2. Drizzle with olive oil and lemon juice and toss to coat. Top with salami and sprinkle with Parmesan.
