Ingredients:
- 1/4 cup heavy cream
- 1/4 cup sweetened condensed milk
- Zest of 3 limes
- 2 cups (about 300 g) white chocolate chips
- Juice of 2 limes (about 2 tablespoons)
- 1 tablespoon unsalted butter, room temperature
- 5 whole graham crackers, crushed (about 1 cup)
Preparation:
- Combine heavy cream, condensed milk, and lime zest in a small saucepan over medium heat. Heat until the mixture just begins to simmer, about 4 minutes. Remove from heat and let the lime zest steep in the cream for 20 minutes.
- Return the cream to medium heat and heat until just barely simmering, about 3 minutes.
- Place the white chocolate in a medium microwave-safe bowl. Pour the hot cream over the chocolate and let it sit for 2 minutes. Stir until smooth; if there are lumps, microwave the mixture in 15-second intervals, stirring until smooth.
- Add lime juice. Add butter. Cover with plastic wrap, placing it directly on the surface of the ganache. Refrigerate until the ganache hardens, about 2.5-3 hours.
- Line a baking sheet with parchment paper. Place crushed graham crackers on a plate. Scoop 1 tablespoon of ganache and form it into a ball with your hands. Roll the ball in the graham cracker crumbs to coat completely, then place it on the prepared baking sheet. Repeat with the remaining ganache.
- Refrigerate the truffles until ready to serve.
