Oven-baked citrus-glazed chicken wings with a spicy yogurt avocado sauce topcook.tomathouse.com
Ingredients:
Wings
- 2 kg chicken wings, cut at the joint (discard the tips)
- 0.5 cup pineapple jam
- 2 tsp finely grated ginger root
- Juice of 2 limes
- Juice of 2 oranges
- A pinch of cayenne pepper
- 2 green onions, thinly sliced
- Vegetable oil to grease the baking sheets
Dip sauce
- 1/4 cup plain Greek yogurt
- 1 avocado, cut in half, remove the pit and scoop out the flesh into a bowl
- 1 jalapeño, seeded and chopped
- Juice of 2 limes
Preparation:
- Spicy yogurt sauce with avocado:
Combine yogurt, avocado, jalapeño, lime juice, 2 cups water, and 3/4 cup salt in a blender and blend until smooth.
- Preheat oven to 220°C. Generously grease 2 rimmed baking sheets with vegetable oil.
- Toss the wings with 2 teaspoons of salt and a few grinds of black pepper and arrange them in a single layer on 2 prepared baking sheets. Bake until very crisp, about 55 minutes.
- While the wings are baking, combine the pineapple jam, ginger, lime juice, orange juice, cayenne pepper, and 1/2 teaspoon salt in a medium saucepan and bring to a boil over medium heat. Reduce the heat slightly and simmer until the liquid becomes thick and syrupy, coating the back of a spoon, about 8 minutes.
- Transfer the baked wings to a large bowl and toss them with the citrus glaze and green onions. Serve with the dipping sauce.
