Ingredients:

  • 1.5 cups firmly packed light brown sugar
  • 1 cup unsalted butter
  • 2 and 1/4 cups premium flour
  • 3/4 tsp baking soda
  • 0.5 tsp fine salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • About 1 1/2 cups toffee morsels, semisweet chocolate chips, hard peanut butter, or white chocolate (optional)

Preparation:

  1. Preheat oven to 190°C. Grease and flour a 22x32cm glass baking dish.
  2. Place the sugar in a large bowl. Melt the butter in a small frying pan or in a glass bowl in the microwave. Stir the butter into the sugar until completely incorporated, then cool to room temperature.
  3. Meanwhile, in another medium bowl, whisk together the flour, baking soda, and salt. Stir the eggs and vanilla extract into the sugar mixture. Gradually add the flour mixture and mix until a thick, smooth dough forms. Stir in any chocolate chips, peanut butter, or toffee.
  4. Pour the batter into the prepared pan and spread it out to evenly fill the pan. Bake until the edges are lightly browned and a toothpick inserted into the center of the blondie comes out clean, about 20-25 minutes.
