Ginger Shandy with Pale Ale

Ingredients:

  • 0.5 cups of sugar
  • 5 cm ginger root, peeled and coarsely grated
  • 2 tablespoons freshly squeezed lemon juice
  • 120 ml chilled sparkling water
  • 1 bottle (0.33 l) of chilled India Pale Ale
  • 2 lemon wedges, for serving

Preparation:

  1. In a small saucepan, heat the sugar, ginger, and 0.5 cups of water over medium-high heat. Bring to a boil, stir, and dissolve the sugar. Remove from heat and let steep and cool for 15 minutes, then strain the syrup (you should have about 3/4 cup). Set aside the remaining ginger syrup for another use.
  2. In a large liquid measuring cup, combine 1/4 cup ginger syrup with lemon juice. Add club soda. Pour the drink into two chilled glasses. Pour half the beer into each glass. Garnish each cocktail with a lemon wedge and serve.
