Ingredients:
- Half a small yellow onion or a quarter of a red onion, finely chopped
- 2 cloves of garlic
- 0.5 tsp coarse salt
- 2 ripe Hass avocados
- Juice of 1 lime
- 2 - 3 tbsp coarsely chopped fresh coriander leaves
- 1 ripe plum tomato, core removed and diced
- 1/4 to 1/2 jalapeno pepper (with seeds), finely chopped
Preparation:
- Soak the onions in cold water for 15 minutes. Drain and transfer to a large bowl.
- Place the garlic on a cutting board, sprinkle with 1/4 teaspoon of salt, and mash it with a chef's knife until it becomes a paste. Transfer the paste to the bowl with the onions.
- Cut the avocado in half. Remove the pits and discard. Using a knife, carefully make several slits in the avocado flesh. Scoop the avocado flesh into the bowl with the onion and garlic. Repeat with the remaining avocado.
- Add lime juice, cilantro, tomatoes, and jalapeño to the avocado to taste. Mix everything together, mashing with a rubber spatula or a large fork. The guacamole should still be chunky. Season with salt to taste. Serve immediately.
Note Here's a quick and easy way to remove the pit from an avocado: tap the pit with a knife blade and twist. The pit will pop out.
