Tequila and Ancho Flavored Candied Bacon topcook.tomathouse.com
Ingredients:
- 450 g of bacon
- 1 cup tequila
- 1 teaspoon ground ancho pepper
- 1/4 heaping teaspoon cayenne pepper
Preparation:
- Soak 1 pound of bacon in 1 cup of tequila and refrigerate for 2-8 hours. Drain the tequila and pat the bacon dry.
- Preheat oven to 350°F (175°C). On a large plate, combine 1 cup light brown sugar, 1 teaspoon ground ancho chili, and 1/4 heaping teaspoon cayenne pepper; spread into an even layer.
- Roll the bacon strips in the sugar mixture, pressing them in until they adhere. Place the coated bacon on two parchment-lined baking sheets. Sprinkle with the remaining sugar mixture.
- Bake for 15 minutes, flip the bacon, and continue baking until golden and glazed, another 15 to 20 minutes (the bacon will still be pliable). Transfer to a wire rack and let cool; the bacon will be firm but not very crisp.
