Fruit salad with watermelon and coconut

Ingredients:

  • 5 cups of crushed seedless watermelon pulp
  • 1/3 cup sweetened coconut flakes
  • 3 tbsp. condensed milk
  • 2 tbsp. heavy cream
  • Juice of 1/2 lime
  • Coarse salt
  • A pinch of ground cinnamon

Preparation:

  1. Preheat the oven to 200 degrees Celsius. Place the coconut flesh on a baking sheet and bake for 5-8 minutes, stirring occasionally, until golden brown. Transfer to a bowl and let cool.

    In a small bowl, combine condensed milk, heavy cream, lime juice, and a pinch of salt. Place the watermelon in a larger bowl and drizzle with the condensed milk mixture. Sprinkle with toasted coconut and cinnamon.
