Vegan Whole Grain Waffles

Ingredients:

  • 1 and 3/4 cups whole wheat flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1 tbsp cornstarch
  • 1.5 cups unsweetened soy milk (chilled, not shelf-stable)
  • 0.5 cups vegetable oil
  • 1 tsp vanilla extract
  • Maple syrup, nut butter or jam for serving
  • Special equipment: waffle iron

Preparation:

  1. Preheat a waffle iron to medium-high heat. Preheat the oven to 90°C (195°F) to keep the waffles warm.
  2. In a large bowl, combine the flour, sugar, baking powder, cornstarch, and 3/4 teaspoon salt. In a medium bowl, combine the soy milk, oil, and vanilla. Pour the milk mixture into the flour mixture and knead until combined (it's okay if some lumps remain).
  3. Generously spray the top and bottom plates of a waffle iron with cooking spray. Fill each compartment almost completely with batter, spreading it to the edges. Close the lid and cook until the waffles are golden brown and crisp, 6–7 minutes. Keep the finished waffles in the oven or transfer them to a plate, covered with foil, while you cook the next batch. Serve the waffles with maple syrup, nut butter, or jam.

    Waffles can be frozen in plastic bags for up to 1 month. Reheat in a toaster or oven at 150°C until warmed through and crispy.
