Ingredients:
- 3 cups canned chickpeas, drained
- 0.5 cup freshly squeezed lemon juice (3 lemons)
- 0.5 cup tahini
- 2 tbsp. minced garlic (6 cloves)
- 1.5 tsp. sriracha sauce
- 0.5 cups baked sweet pepper
- High-quality olive oil
- 2 tablespoons toasted pine nuts, for serving
- Toasted pita triangles and fresh vegetables for serving
Preparation:
- In the bowl of a food processor fitted with a steel blade, combine the chickpeas, lemon juice, tahini, garlic, Sriracha sauce, roasted peppers, 4 teaspoons salt, and 2 teaspoons black pepper. Process until the mixture is flaky and chunky. Taste and transfer to a serving bowl.
- Drizzle with olive oil, sprinkle with toasted pine nuts and serve chilled or at room temperature with pita chips and vegetables.
