Ingredients:
Applesauce
- 1 kg Golden Delicious apples, peeled and cut into pieces
- 3 tablespoons of sugar
- 1 tbsp. freshly squeezed lemon juice
Pork cutlets
- 1 teaspoon paprika
- 0.5 tsp garlic powder
- 0.5 tsp dried sage
- 4 natural pork chops on the bone, approximately 170 g each, 1 cm thick.
- 2 tablespoons of vegetable oil
- 0.5 cups lightly salted chicken broth
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chilled unsalted butter
- Chopped fresh parsley, for serving
Preparation:
- Make applesauce:
Combine the apples, sugar, and 1/2 cup water in a large saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium, cover, and simmer, stirring occasionally, until the apples are very soft but still juicy, about 15 minutes. Remove from the heat and stir in the lemon juice. Mash the apples with a fork or blend with an immersion blender or food processor until smooth. Transfer to a bowl and refrigerate for at least 30 minutes.
- Meanwhile, prepare the pork cutlets.:
Combine the paprika, garlic powder, and sage in a small bowl. Season the pork chops with salt and black pepper and rub with the paprika mixture. Heat a large nonstick skillet over medium heat and add the vegetable oil. Add the pork, reduce the heat to medium, and cook until golden brown on the bottom, about 3 minutes. Flip and cook until the chops are browned on the other side and cooked through, another 2-3 minutes. Transfer to a plate and drain any excess fat from the skillet.
- Add the chicken broth and lemon juice to the skillet and scrape up any browned bits. Add the pork juices to the skillet and simmer over low heat until the sauce thickens, 2-3 minutes. Add the butter and stir until fully incorporated. Transfer the pork chops to a platter and pour the sauce from the skillet over them, sprinkle with parsley. Serve with applesauce.
