Walnut cutlets

Ingredients:

  • 1.5 cups toasted walnuts
  • 1 and 1/4 cups rolled oats
  • 1.5 tbsp maple syrup
  • 1 tbsp. l. brown sugar
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 3/4 teaspoon coarse salt
  • 0.5 tsp dried rosemary
  • 0.5 tsp cayenne pepper
  • 1/4 tsp. grated nutmeg
  • 2 pinches red pepper flakes
  • 3 large eggs
  • Odorless oil, such as canola or vegetable oil, for frying

Preparation:

  1. In a food processor, pulse the nuts until coarsely ground. Add the oats, maple syrup, brown sugar, sage, thyme, salt, rosemary, cayenne pepper, nutmeg, paprika, eggs, and a pinch of black pepper and continue to pulse until the mixture forms a thick dough. There should still be some large pieces of oats and walnuts remaining.
  2. Pour a generous layer of oil into a skillet and heat over medium-high heat. Drop 2 tablespoons of batter per patty, spacing them at least 2.5 cm apart, slightly flattening them, and fry until golden brown on the bottom, about 4 minutes. Flip and fry until golden brown on the other side, another 4 minutes. Transfer to a paper towel-lined plate to absorb excess oil. Fry the remaining patties in the same manner.
