Ingredients:
- 3 tbsp. frozen brown rice
- 0.5 cup frozen green peas
- 1/4 cup coconut water
Preparation:
- In a saucepan over medium heat, heat 1 teaspoon coconut oil. Add 1/4 cup sweet coconut flakes and a pinch each of red pepper flakes and salt; cook, stirring, for 3 minutes.
- Add 3 cups frozen brown rice, 1/2 cup frozen green peas, and 1/4 cup coconut water. Cover, reduce heat, and cook, stirring occasionally, until the rice and peas are heated through. Add some chopped cilantro.
