Color-changing blue tea granite topcook.tomathouse.com
Ingredients:
- 1 cup of sugar
- 2 tablespoons of Clitoria ternatea flower tea
- 3/4 cup coconut milk
- 2 lemons, cut into 4 pieces
- Special equipment: square glass baking dish
Preparation:
- Place an 8-inch square glass baking dish in the freezer to chill.
- Combine the sugar and 2 cups of water in a medium saucepan and heat over medium-high heat. Bring to a boil until the sugar dissolves, about 5 minutes. Remove from the heat, add the peacock flower tea, and steep until the sugar syrup turns deep blue, about 15 minutes; strain. Let cool to room temperature, about 5 minutes.
- Stir the coconut milk into the syrup. Pour the mixture into a chilled baking dish and freeze for 1 hour. Scrape the mixture with a fork and freeze for another hour. Scrape again and freeze for another hour. Scrape the mixture one last time before serving.
- Serve the granita with lemon wedges. Invite your guests to squirt some lemon juice over the granita and watch the color change from cool blue to vibrant purple.
Note
Tea made from Clitoria ternatea flowers can be purchased in specialty tea shops and online stores.
