Mixed nuts and raisins masala

Ingredients:

    Masala spice mix

  • 1/4 cup unsweetened coconut flakes
  • 3 tablespoons of sugar
  • 2 tsp. garam masala
  • 1 teaspoon curry powder
  • 0.5 tsp ground turmeric

    Nuts

  • Vegetable oil to grease the baking sheet
  • Protein of 1 large egg
  • 1 cup unsalted raw almonds
  • 1 cup unsalted raw cashews
  • 1 cup unsalted raw pistachios
  • 1 cup unsalted raw walnuts
  • 1 cup golden raisins

Preparation:

  1. Combine coconut, sugar, garam masala, curry powder, turmeric, if using, and 1.5 teaspoons salt in a small bowl and set aside.
  2. Preheat oven to 175°C. Lightly grease a rimmed baking sheet with vegetable oil.
  3. Nuts:

    Place the egg white in a large bowl and whisk until foamy. Add the almonds, cashews, pistachios, and walnuts and stir to coat. Add the spice mixture and stir to coat.
  4. Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15-20 minutes. Let cool on the baking sheet, stir in the raisins, and transfer to a large bowl.
