Green beans in soy glaze with sesame seeds topcook.tomathouse.com
Ingredients:
- 450 g green beans, ends trimmed
- 2 tablespoons soy sauce
- 2 tsp. dark sesame oil
- 0.5 tsp cornstarch
- 1/4 tsp crushed red pepper flakes
- 1 tbsp peanut or vegetable oil
- 3 medium shallots, thinly sliced
- 2 cloves garlic, crushed
- 2 tsp chopped peeled ginger root
- 1 tbsp sesame seeds
- 2 tsp. rice vinegar
Preparation:
- Bring a large saucepan of salted water to a boil. Add the beans and cook until crisp-tender, 6-8 minutes. Drain, rinse the beans under cold water, and set aside.
- Meanwhile, combine soy sauce, sesame oil, cornstarch, red pepper flakes and 2 tablespoons water in a small bowl.
- Heat the peanut oil in a large skillet over medium-high heat. Add the shallot, garlic, ginger, and sesame seeds and cook, stirring occasionally, until the shallot is golden and soft, about 3 minutes. Add the green beans and sauce and cook, stirring, until the soy mixture thickens and coats the beans, about 1 minute. Remove from heat and stir in the vinegar.
