Hot Cheddar and Bacon Sandwich topcook.tomathouse.com
Ingredients:
- 2 thick slices of bacon
- 1 tsp. brown sugar
- Half a yellow onion, thinly sliced
- 3 tablespoons salted butter at room temperature
- 2 thick slices of multigrain bread
- 1 tbsp. mayonnaise
- 90 g of grated white cheddar
- Half a Granny Smith apple, thinly sliced
- 1 tbsp grainy Dijon mustard
Preparation:
- In a nonstick skillet (20 cm) over medium heat, fry the bacon until crisp, about 5 minutes. Cut in half and set aside.
- To the same pan, add the brown sugar, onion, and 1 tablespoon of butter. Cook, stirring occasionally, until the onion is golden, about 5 minutes. Transfer to a plate and set aside.
- Spread one slice of bread with mayonnaise. Top with half the grated cheese, then the onions. Arrange the apple slices and bacon on top of the onions, then add the remaining cheese. Spread the other slice of bread with mustard and place it mustard-side down on top of the cheese. Brush the outside of the top slice of bread with 1 tablespoon of butter.
- Place the sandwich, butter side down, in a skillet over medium-low heat. Brush the top of the sandwich with the remaining 1 tablespoon butter. Cook the sandwich on both sides until the cheese is melted, 3–4 minutes per side. Slice in half and serve.
