Ingredients:
- 1 sachet (7 g) gelatin powder
- 2 tbsp. cream 10%
- 1/4 cup sugar
- 0.5 tsp lemon zest
- 0.5 tsp vanilla extract
- 4 large strawberries, cut into small cubes
- Honey to drizzle
- Special equipment: 6 glass bowls or ramekins with a capacity of 120 ml.
Preparation:
- Place 1/4 cup cold water in a small bowl. Stir in the gelatin, then let it sit until softened, about 5 minutes.
- In a small saucepan, combine the cream and sugar and heat over medium heat until the sugar melts and the cream begins to steam. Add the softened gelatin, lemon zest, vanilla extract, and a large pinch of salt. The gelatin should dissolve completely.
- Divide the mixture evenly among 6 small glass bowls and let cool for a few minutes. Wrap and refrigerate until the jelly has set (the panna cotta should be firm), about 4 hours. This dessert can be made a day ahead and stored in the refrigerator.
- Pour hot water into a medium bowl. Working with one panna cotta at a time, submerge the bowl almost completely in the water and hold it there for about 1 minute. Wipe the bowl dry, then invert it onto a small serving plate. Repeat with the remaining desserts. The panna cotta can be transferred to serving plates up to 3 hours before serving. Garnish with strawberries and a drizzle of honey.
