Ingredients:
- 2 tbsp and 2 tbsp baking flour
- 0.5 tbsp baking powder
- 1/4 tbsp table salt
- 170 g salted melted butter (3/4 cup)
- 1 cup light brown sugar
- 0.5 cup granulated sugar
- 1 egg plus 1 egg yolk
- 1 teaspoon almond extract
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips (granules)
- 1 cup ground pistachios
- 0.5 cups candied cherries
Preparation:
- Preheat oven to 160C. Line 2 baking sheets with parchment paper.
- Combine flour, baking powder, and salt in a small bowl. Let the mixture sit for a while.
- In a large bowl, beat the butter, light brown sugar, and granulated sugar until smooth. Add the whole egg, egg yolk, almond extract, and vanilla extract. Mix until smooth.
- Using a rubber spatula, fold the flour mixture into the sugar-egg mixture, little by little. Add the chocolate chips, pistachios, and cherries, and mix well.
- Roll the dough into 1/4 cup balls and place them on the prepared baking sheets, spacing them 2 inches apart. Bake for 10 minutes. Rotate the baking sheets and continue baking until light golden brown, another 8 to 10 minutes. Let the cookies cool.
