Perfect pork ribs topcook.tomathouse.com
Ingredients:
- 2 teaspoons coarse salt
- 1 teaspoon smoked paprika
- 1 tsp sweet paprika
- 1 tsp onion powder
- 1 teaspoon garlic powder
- 1 tsp ground cumin
- 1/4 tsp freshly ground black pepper
- A pinch of cayenne pepper
- 2 slices of pork ribs from the loin area
- 2 tablespoons white or apple cider vinegar
- Cooking spray to spray the slow cooker
- 1/4 cup beer (any)
- 1 cup of your favorite barbecue sauce (see recipe), for lubrication
- Special equipment: large slow cooker (at least 6 quarts)
Preparation:
- Spice mix:
Place salt, smoked and sweet paprika, onion powder, garlic powder, cumin, black pepper, and cayenne pepper (if using) in a small bowl and stir with a fork.
- Spray the ribs with vinegar and rub it into the flesh. Rub the ribs with the spice mixture. At this point, you can refrigerate the ribs overnight.
- Spray the inside of a large (at least 6 quart) slow cooker with cooking spray. Place the ribs in the slow cooker, cutting them in half if necessary to fit them. Pour beer into the bottom of the pot. Cover and cook on low until the meat is tender, about 9 hours.
- When the ribs are almost done, preheat the grill to high heat.
- Remove the ribs from the slow cooker, blot off any excess liquid, and place them on a hot grill. Grill until crispy, 10–15 minutes, brushing with barbecue sauce (if using).
