Ingredients:
Panna Cotta
- 1 tbsp. l. + 1 tsp. powdered gelatin
- 2 tablespoons of cold water
- 3 cups of 10% cream at room temperature
- 1/3 cup sugar
- 2 tsp vanilla extract
Jelly layers
- 1 packet (90 g) of strawberry jelly mix
- 1 packet (90 g) of orange jelly mix
- 1 packet (90 g) of lemon jelly mix
- 1 packet (90 g) of lime jelly mix
- 1 packet (90 g) of blue raspberry flavored jelly mix
- 1 packet (90 g) of grape jelly mix
- 6 tsp. powdered gelatin
- 6 cups of boiling water
- 1.5 cups vodka (see note)
- Special equipment: egg tray, eight dessert glasses with a capacity of 150 ml.
Preparation:
- Panna Cotta:
In a medium saucepan, dissolve the gelatin in cold water. Let it sit for about 3 minutes. Place the saucepan over low heat and cook until the gelatin dissolves, about 1 minute. Once the gelatin has liquefied, whisk in the cream and sugar. Cook, stirring occasionally, until the sugar dissolves and the mixture is hot and just steaming, about 5 minutes. Stir in the vanilla extract and remove from heat, about 15 minutes.
- Place each color of gelatin in a separate medium microwave-safe bowl or a 4-cup liquid measuring cup. Add 1 teaspoon of regular gelatin to each; stir until smooth. Pour 1 cup of boiling water into each bowl and stir well to dissolve the gelatin. Add 1/4 cup of vodka to each serving. Stir.
- Place an empty egg carton on a large rimmed baking sheet. Place 8 dessert glasses in the indentations at an angle. Make room in the refrigerator to accommodate the baking sheet.
- Pour 1 tablespoon of the liquid panna cotta into each glass. Refrigerate for 15 minutes. Then pour in the grape jelly to a thickness of about 0.5 cm. Refrigerate for 15 minutes. Repeat pouring and cooling layers of 0.5 cm thick panna cotta, blue jelly, more panna cotta, lime jelly, and then more panna cotta, cooling each layer for 15 minutes before adding the next. If the colored jelly begins to set before pouring, microwave it for 30 seconds and stir well until it becomes liquid again.
- Place the dessert glasses vertically directly on the baking sheet. The frozen diagonal layers will remain in place.
- Pour and chill layers of lemon, orange, and strawberry jelly to a thickness of 0.5 cm, alternating each color with panna cotta and finishing with strawberry jelly on top. Refrigerate until set, about 2 hours. Serve well chilled.
Note
For a non-alcoholic dessert, replace the vodka with cold water. You may have some of each color of jelly left over. Let the jelly set, then cut into cubes and layer it in glasses, garnishing with whipped cream. The leftover jelly will make 1-2 small parfaits.
