Ingredients:
Cookie:
- 1/4 cup (60 g) softened butter
- 1/4 cup vegetable fat
- 3/4 tbsp. light brown sugar (compacted)
- 1 egg
- 3/4 cup premium wheat flour
- 1/2 teaspoon of baking soda
- 1/4 teaspoon salt
- 1/2 tsp baking powder
- 1/2 tsp ground ginger
- 1/2 tsp. freshly ground nutmeg
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cloves
- 1/4 tsp ground allspice
- 1 cup oatmeal
- 1/2 cup raisins
- 3/4 cup chopped walnuts
- 1/2 tsp natural vanilla extract
- Brown butter glaze, see recipe below
Brown Butter Frosting:
- 1/4 cup (60 g) butter
- 1.5 cups sifted powdered sugar
- 1/2 tsp vanilla extract
Preparation:
- Preheat oven to 180C. Grease one or more baking sheets.
- Using an electric mixer, beat the butter, vegetable shortening, and sugar in a bowl until fluffy. Add the egg and beat until the mixture turns lighter.
- Combine flour, baking soda, salt, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice; stir into the creamed mixture. Add the oats, raisins, walnuts, and vanilla extract and mix well. Drop the batter by heaping teaspoons onto a baking sheet. Bake for 12-15 minutes. Frost with glaze.
- Brown Butter Frosting:
In a small saucepan over medium heat, heat the butter, stirring occasionally, until golden brown. Remove from heat and stir in the sifted powdered sugar and vanilla extract. Add enough water (2-3 tablespoons) to make the glaze the consistency of thick sour cream. Pour the glaze over the warm cookies.
