Ingredients:
Buns
- 2 cups self-raising flour + extra for dusting
- 0.5 tsp sugar
- 110 g chilled unsalted butter
- 1 cup of sour milk or kefir, shake
Honey oil
- 55 g unsalted butter at room temperature
- 1 tbsp. honey
- 1/4 teaspoon coarse salt
- Special equipment: 6-liter air fryer, cookie cutter with a diameter of 5 cm.
Preparation:
- Biscuits:
Place the flour in a large bowl and add the sugar. Using your hands, mix 6 tablespoons of butter into the flour mixture until it forms a sand-like consistency with small chunks of butter. Stir in the buttermilk with a wooden spoon, then turn the dough out onto a floured work surface.
- Form the dough into a circle 12–15 cm in diameter and about 2.5 cm high. Dust a round cookie cutter with flour and cut out 10–12 circles from the dough. Transfer the cookies to a plate.
- Melt the remaining 2 tablespoons butter. Brush each bun with melted butter. Place the buns in a 6-quart air fryer, making sure they touch. Bake at 350°F (175°C) until golden brown, about 15 minutes (see Note).
- Honey butter:
While the cookies are baking, combine the butter, honey, and salt in a small bowl. Set aside or refrigerate until ready to serve. Serve the biscuits warm with honey butter.
