Strawberry and Cream Panini

Ingredients:

  • 1/4 cup butter
  • 1/4 cup ricotta
  • 1/4 tbsp. roasted hazelnuts
  • 220 g of hulled and halved strawberries
  • 1 teaspoon of honey
  • 1 tsp orange zest (from half an orange)
  • 1/8 tsp salt
  • 8 slices brioche, 1cm thick.
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter at room temperature

Preparation:

  1. In a food processor, combine the cream cheese, ricotta, hazelnuts, strawberries, honey, orange zest, and salt and process until smooth. Spread about 1/4 cup of the mixture onto 4 brioche slices. Top with the remaining slices, like sandwiches.
  2. Mix sugar and cinnamon in a small bowl.
  3. Heat a large nonstick skillet over medium heat. Alternatively, use a panini press. Spread 1 tablespoon butter on both sides of each sandwich, then sprinkle with cinnamon sugar.
  4. Place the sandwiches in the pan and cook until golden brown and caramelized, 2-3 minutes per side. Let the panini rest for 1 minute, then cut in half. Serve immediately.
