Strawberry Margarita Ice Pops

Ingredients:

  • 1 cup freshly squeezed lime juice (6-8 limes)
  • 0.5 cups of water
  • 0.5 tbsp triple sec
  • 1/4 cup tequila
  • 0.5 cups of ultrafine sugar
  • 2 cups strawberries, quartered
  • Special equipment: fruit ice cube trays

Preparation:

  1. In a blender, combine lime juice, water, triple sec, tequila, and sugar; blend until the sugar dissolves. Set aside 8 strawberry quarters and place the remaining berries in the blender; blend until the strawberries are pureed.
  2. Place a strawberry slice on the end of each popsicle stick. Pour the Margarita into popsicle molds, insert the sticks, and freeze for at least 4 hours or overnight. Remove the popsicles from the molds and serve.
