Mini Spinach Alfredo Pizzas on English Muffins topcook.tomathouse.com
Ingredients:
- 1 cup Alfredo sauce
- 2-3 cups fresh small spinach
- 4 English muffins, cut in half horizontally and toasted
- 1 teaspoon Italian seasoning
- 2 grilled chicken breasts, shredded (2 cups), room temperature
- 2 tbsp. grated mozzarella
Preparation:
- Preheat oven to 200°C.
- Pour the Alfredo sauce into a saucepan and bring to a simmer over medium-low heat. Add the spinach and stir until wilted; turn off the heat.
- Spread 1/4 cup sauce on each toasted muffin half, sprinkle with Italian seasoning, top with some chicken, and some mozzarella. Bake on a baking sheet until the cheese is melted, about 5 minutes. Serve the mini pizzas warm.
