Quick Tomato, Pepper, and Mozzarella Salad topcook.tomathouse.com
Ingredients:
- 1 cup Hidden Valley Farmhouse Originals Italian Herb Dressing
- 680 g of bocconcini mozzarella in olive oil, drained
- 6 cups (about 700 g) cherry tomatoes, halved
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper, seeded and cut into pieces
Preparation:
- Marinate the mozzarella:
Pour Hidden Valley Farmhouse Originals Italian Herb Dressing into a plastic container with a lid and add the mozzarella balls. Close the container and shake well.
- Refrigerate for at least 8 hours, shaking occasionally.
- Salad:
Place tomatoes and bell peppers in a large bowl.
- Using a slotted spoon, transfer the marinated mozzarella balls to a bowl and toss. If more dressing is needed, add the mozzarella marinade. Serve the salad chilled or at room temperature.
