The Easiest Succotash

Ingredients:

  • 4 thick slices bacon, cut into pieces
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, chopped
  • 1 small yellow onion, chopped
  • 5 ears of corn, kernels removed (about 5 cups)
  • 2 cups canned lima beans, rinsed
  • 1/4 cup fresh basil leaves, torn
  • 1 tbsp red wine vinegar

Preparation:

  1. Place a large skillet over medium heat until hot, then add the bacon and cook until the fat has rendered and the bacon is crisp, about 10 minutes.
  2. Add tomatoes, garlic, and onion and cook until the onion has softened slightly, about 5 minutes.
  3. Add the corn and cook for another 2 minutes. Add the lima beans and remove from heat. Stir in the basil and red wine vinegar, season with salt and pepper to taste, and serve.
