Ingredients:
- 4 thick slices bacon, cut into pieces
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, chopped
- 1 small yellow onion, chopped
- 5 ears of corn, kernels removed (about 5 cups)
- 2 cups canned lima beans, rinsed
- 1/4 cup fresh basil leaves, torn
- 1 tbsp red wine vinegar
Preparation:
- Place a large skillet over medium heat until hot, then add the bacon and cook until the fat has rendered and the bacon is crisp, about 10 minutes.
- Add tomatoes, garlic, and onion and cook until the onion has softened slightly, about 5 minutes.
- Add the corn and cook for another 2 minutes. Add the lima beans and remove from heat. Stir in the basil and red wine vinegar, season with salt and pepper to taste, and serve.
