Ingredients:
- 0.5 cup almonds, raw or roasted
- 0.5 cup walnuts, raw or roasted
- 1/4 cup shelled pumpkin seeds, raw or roasted
- 1 tbsp poppy seed flour or unsweetened cocoa powder
- 1 tbsp. chia seeds
- Sea salt
- 10 Medjool dates, pitted
- 1/4 cup almond paste
Preparation:
- Place the almonds, walnuts, and pumpkin seeds in a food processor and process until finely chopped. Add the poppy seed flour, chia seeds, and 0.5 teaspoon of sea salt and process until smooth.
- Add the dates and continue beating, pulses 10-15 times. Add the almond paste and beat until smooth. The mixture should be able to be pressed together in your hand. If it's too crumbly, add a little more almond paste.
- Place the nut mixture in the refrigerator to set for about 10 minutes. Pinch off about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining nut mixture. Refrigerate the balls for another 5-10 minutes to set. Leftovers can be stored in a tightly sealed container in the refrigerator for several weeks..
